PHUCK YO FAST FOOD, RECIPE ONE. //
MMMM… QUINOA!! Who doesn’t love this yummy grain?! I just made this quick “Southwest” style entree for lunch & thought I’d share the recipe! Best part? It’s VEGAN and soooo good! All ingredients were bought at my favorite store, TRADER JOES <3
-1 part organic white quinoa, to 2 parts water (I usually make 1 cup quinoa dry to 2 1/4 cups water..perfect for leftovers!)
-cook quinoa in a giant pot and wait around a bit…this gift from the Andes takes like, 20 minutes to cook :(
-add sea salt to taste
-let it cool!
Now the fun part… mixing a bunch of sh*t together!!!
-half a can of Trader Joes whole kernel corn
-half a can of Trader Joes black beans
-handful of Trader Joes shredded soy cheese blend (sooo good!)
-whole flax seeds (as much or as little as you want)
-red pepper flakes (the spicier the better!)
-2 tablespoons of Trader Joes “red pepper spread with eggplant and garlic”
-1 chopped mini persian cucumber (yes, from Trader Joes!!!!)
MIX IT ALL TOGETHER.
Now tell me you would still rather have a nasty, GMO and sodium infested burrito bowl from the drive thru…
